Wiggle GlaceThis is an old German dish.1 chicken hen1 1/2 teaspoons saltWater to cover1 cup bread crumbs3 tablespoons brown butter1 tablespoon minced parsleyCook chicken until tender. Remove meat from bones and cut it into small pieces. Add to broth. Moisten bread crumbs with brown butter. Make noodle dough.Noodles2 cups flour2 eggs1/2 teaspoon salt2 to 3 tablespoons waterSift flour and salt together. Make a well in flour and add eggs and water. Mix thoroughly. Roll stiff dough out in oblong shape, moisten with chicken fat and spread with the buttered crumbs. Roll as for a jellyroll and cut in 1 to 1 1/2 inch pieces. Bring chicken and broth to a boil and drop in pieces of dough. Add minced parsley. Cover and cook slowly for 20 minutes, then serve.Serves 6 to 8. Pineapple-Banana Dessert1 1/2 cups brown sugar4 cups water1 (2-inch) cinnamon stick1 (3 1/2 pound) pineapple2 pounds bananas2 (1-inch) cinnamon sticksJuice and peel of 1/2 Mexican limePreheat oven to 325 degrees F.Bring sugar, water and cinnamon stick to a boil and let them continue to boil for about 20 minutes. You should now have about 2 1/2 to 3 cups liquid. Remove the cinnamon stick.Clean and dice the pineapple and bananas and blend it with the syrup to a coarse purée. Pour the mixture into a shallow ovenproof dish and add cinnamon, lime peel and juice. Set the dish in the oven and let the fruit purée cook for about 5 to 6 hours. The cooking time will depend upon the depth of the mixture in the dish. From time to time, scrape the mixture from the sides of the dish and stir it well. This is very important toward the end of the cooking period.When the mixture is rich, dark brown, thick and sticky, transfer it to a small serving dish and glaze it quickly under the broiler.
